The easiest way to transparently encrypt/decrypt/sign/verify email is to use an email program that supports gpg. Enigmail is one option. Files can also be manually encrypted and sent in plaintext email using gpg as follows:

Encrypt and sign:
$ gpg -u sender@sender.org -r recipient@some.org --armor --sign --encrypt topsecret.txt
This produces (by default) the file topsecret.txt.asc
The gpg public key of recipient must have been imported before encryption. Then simply attach and send the file topsecret.txt.asc :-)

Decrypt and verify:
$ gpg --decrypt topsecret.txt.asc
The gpg public key of the sender must have been imported before decryption.
